In today’s blog, I want to talk to you about my plans for the coming year, so that you all will hold me accountable! I also want to share one of my mama’s delicious recipes with you so that you can enjoy it in the coming year!
I am officially now an empty-nester for the first time since 1989!
I must admit that it’s a little bit jarring to realize that my days of mothering a house full of boys, the days of cooking 3 meals a day for them, doing tons of laundry, homeschooling, and disciplining them are passed. Now I’ve entered into a new phase of simply being available when they need me, loving on them, supporting them where and when I can, and most of all praying for them.
In the coming year, it is my goal and my intention to blog and Vlog on the YouTube channel weekly. Of course, there is always the chance that something will happen that will prevent me from doing so, but if we aim for nothing, we will hit the mark every time, right? So that is my aim, that is my goal.
As a New Year’s gift to you, I want to share with you, a tasty southern salad that my moma always made for our New Year’s Day meal. It was light and refreshing and was always a welcome cleansing of the palate after our delicious and traditional southern meal of black-eyed peas, greens, fried hog jowl, and cornbread.
First, I want to share a funny little story about my moma and this salad.
In the hurriedness of getting ready to feed the big crowd that is our family, my moma would almost always forget one of the cold dishes that she had prepared. She would accidentally leave it in the refrigerator then she would remember it about three fourths of the way through the meal. She would run to the refrigerator, and announce to all of us that she forgot the apple salad (or potato salad, etc.). We would all be already getting pretty full from the heavy meal, but that did not stop her from trying her best to convince everyone they had room for said forgotten food item. If you weren’t watching and weren’t careful to guard your plate, you would end up with a large spoonful of whatever the forgotten dish was, upon your plate and you would be expected to eat it! My sister, husband and I laugh about that still!
Here is my moma’s apple salad! I hope you all will try it and I know that you will enjoy it!
Mrs. Merle’s (Moma’s) Apple Salad
Granny Smith Apples (4)
Pecans (chopped) (1/2 to 3/4 cup)
Raisins (1/3 cup)
Mini marshmallows (1/2 cup)
Mayonnaise (2 T.)
Peel and chop apples into small cubes. Slice bananas, or cut into chunks.
Chop the pecans.
Place all of these ingredients into a mixing bowl, along with the mini marshmallows, raisins, and mayonnaise. Stir well to coat all ingredients in the mayonnaise.
Chill for at least one hour. Serve cold.
The ratios depend on taste. And you can double or half the salad amounts as you see fit.
You can vary the ratio of the ingredients based on what you like best. If you prefer more apples, add more apples. If you want to use almonds or walnuts, you could do that also, If you want it to be sweeter then you can add more mini- marshmallows, etc. The salad is very flexible. And remember, a good cook tastes along the way! So taste it and see if it’s to your liking. If not, then alter it based on what you like..
